30-Minute Stuffed Pepper Soup


1 tablespoon olive oil

1/2 medium yellow onion, chopped

1 lb lean ground beef

2 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 (8 oz) can tomato sauce

1 (28 oz) can fire-roasted diced tomatoes, undrained

3 cups beef broth

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flake, optional

2 cups cooked white rice

Kosher salt and freshly ground black pepper, to taste


Heat oil in a large pot or Dutch oven over medium heat and add onion. Sauté until soft, about 5 minutes.

Increase heat to medium-high, then add ground beef, season with salt and pepper, and cook until no longer pink, about 5 minutes, breaking up beef with a wooden spoon as it cooks.
